Drink of the Week: Glendalough Pot Still Irish Whiskey

Recently medaled at the 2020 World Whiskies Awards, Glendalough Pot Still Irish Whiskey is comprised of a 2:1 mixed mashbill of unmalted and malted Irish barley, and is triple distilled as tradition dictates. The aging process, however, sets this spirit apart: After three years in ex-bourbon casks, the whiskey is finished in virgin Irish oak hogsheads, made from sustainably sourced trees growing in the distillery’s surrounding Wicklow Mountains (Glendalough plants seven saplings for each felled tree).

Bottled at 43 percent ABV, the whiskey carries caramel and herbal aromas, with flavors of spice, malt, and dried fruit in the glass—perfect for mixing in cocktails like the Blackthorn. $47.99, hitimewine.com, and SRP $54.99, available nationwide
