Drink of the Week: Boardroom Spirits C

Boardroom Spirits‘ foray into vegetable distillates was “B,” a spirit made from fresh beets. Sticking with root veggies, as a follow-up, the Pennsylvania distillery just released “C” made from—you guessed it—carrots. Each bottle of the eau de vie-style spirit uses about 12.5 pounds of ground, fresh carrot that’s fermented and distilled. Considering nothing else is added, the resulting spirit is surprisingly complex. While carrot is the predominant flavor, the spirit has a gentle spiciness and slight sweetness. With many bars experimenting with carrot cocktails, C could easily step in for gin or vodka to up the carrot quotient. $30, Ezras.
