"I find some cocktails are a bit too heavy to consume," says Juyoung Kang of Vegas' Fontainebleau. "So I was looking to create a tropical cocktail that was lighter and brighter." But she also wanted a complex and elevated drink. Her creation? A mezcal highball that's "easy to drink with hints of roasted agave, pineapple, and spice, softened by the coconut water."
