Tomatini: A Tomato Cocktail

In 2010, bartender Jimmy Barrat created this zingy, French Riviera-inspired tomato cocktail for LPM Restaurant & Bar in Dubai. His approach was to celebrate the tomato as a ripe, warm-weather fruit. Instead of a savory drink, à la the Bloody Mary, Barrat plays up the tomato’s sweetness, complemented with white balsamic vinegar and a touch of simple syrup. The cocktail has gone on to be a favorite around the world, including the new LPM location in The Cosmopolitan of Las Vegas.

Ingredients

  • 1 3/4 oz. vodka
  • 1/3 oz. white balsamic vinegar
  • 100g ripe Campari tomato or tomatoes on the vine
  • 1/4 oz. simple syrup
  • pinch of salt
  • pinch of pepper
  • Tools:muddler, shaker, fine-mesh strainer, strainer
  • Glass:martini
  • Garnish:seasoned cherry tomato

Preparation

Add the tomato to a shaker and muddle. Add all the other ingredients to the shaker with ice. Shake to chill and double strain it into the glass. Sprinkle pepper on top of the drink. Garnish.
