Cognac Old Fashioned

For this Old Fashioned-inspired cocktail, Bon Temps beverage director Mike Lay mixes Cognac with rich simple syrup, bitters, maraschino liqueur and absinthe.

Ingredients

  • 2 oz. Cognac (Lay uses Dudognon 5-Year Selection)
  • ¼ oz. maraschino liqueur
  • ¼ oz. rich simple syrup (2:1)
  • 4 dashes Angostura bitters
  • 4 dashes orange bitters
  • 4 dashes Peychaud’s bitters
  • Absinthe
  • Tools:mixing glass, barspoon, strainer
  • Glass:rocks
  • Garnish:lemon and orange peels

Preparation

Prepare a rocks glass by coating with a small amount of absinthe. Combine the remaining ingredients in a mixing glass and briefly stir to chill without adding much dilution. Strain over a large ice cube in the prepped glass, then twist the citrus peels over the drink and use as a garnish.
