Thyme syrup lends an herbal edge to this simple sparkling cocktail.
Combine the gin and syrup and shake with ice; strain into a flute and top with sparkling wine. Garnish.
Thyme SyrupAdd 1 cup of water and a small bunch of thyme to a saucepan and bring to a boil. Reduce the heat and allow to simmer for 15 minutes. Add 1 cup of sugar and stir until it dissolves; remove from the heat. Once it’s cool (about 20 minutes), strain and discard thyme. Refrigerate for up to 2 weeks.
