Traditionally made with gin or Cognac (Cognac being the classic choice), the French 75 gets an elegant update when Old Tom enters the equation.
1½ oz. Old Tom gin
¾ oz. fresh lemon juice
½ oz. simple syrup (1:1)
Champagne or Prosecco
Tools: shaker, strainer
Combine gin, lemon and syrup together in a shaker with ice. Shake for at least 15 seconds, and strain into a coupe glass. Top with sparkling wine.
