Viola Royale Fizz Recipe

viola-royale-cuban-cocktails-vertical-crdt-gabi-porterThis floral fizz recipe is a creative blend of several classics—the Clover Club, Aviation and Ramos Gin Fizz.

4 raspberries
½ oz. simple syrup 
1 oz. silver rum
1 oz. gin
½ oz. crème de violette
¼ oz. Luxardo maraschino liqueur
1 oz. fresh lemon juice
1 egg white (pasteurized if you like)
½ oz. heavy cream
1 oz. dry sparkling wine
Tools: shaker, strainer
Glass: Collins

In a shaker, muddle the raspberries with the simple syrup. Add the remaining ingredients except the dry sparkling wine, then dry shake. Add ice and shake again. Double strain into a glass and top with sparkling wine.
