Velvet Goldmine

Fresh citrus during the holidays is a given in Florida, and this drink from Orlando’s The Courtesy lends a tropical touch to the season. “Citrus is an obvious component in Florida cuisine and beverages,” says owner Gene Zimmerman. “We start to see tangerines around October, and they seem to be at their very best right around the holidays.”

Ingredients

  • 1½ oz. aged rum
  • ½ oz. fresh lime juice
  • ½ oz. tangerine cordial
  • ¼ oz. falernum
  • Tools:shaker, strainer
  • Glass:large rocks glass
  • Garnish:mint sprig

Preparation

Shake the ingredients with ice to chill, then strain into a glass filled with crushed ice. Garnish.

Tangerine Cordial: Use a vegetable peeler, microplane grater or sharp paring knife to remove the zest from 6 tangerines. Juice the tangerines and measure the amount of juice; combine the juice with an equal amount of sugar (by volume) and the reserved zest, and whisk until sugar is dissolved. Let the mixture rest in the refrigerator overnight, then strain to remove solids. Keeps refrigerated for up to 1 week.
