A classic Chilean cocktail that’s rich and creamy, thanks to the combination of pisco, port, crème de cacao and egg.
1¾ oz. aged pisco
¾ oz. ruby port (Red2One uses Mal Portado, a Chilean fortified wine from Malbec grapes)
¾ oz. crème de cacao
1 oz. cinnamon syrup (1:1)
1 egg yolk (pasteurized if you like)
Tools: shaker, strainer, fine strainer
Garnish: grated cinnamon
Add all the ingredients to an ice-filled shaker and shake vigorously until chilled and frothy. Double strain into a chilled coupe. Garnish.
Juan B. Zambrano V., Red2One, Santiago, Chile
