Tony’s Ascension Cocktail

Created by bartender Ren Brown for one of Drink’s favorite regulars, this sparkling wine cocktail balances a bit of warming spice with a bitter backbone.

½ oz. allspice dram
¼ oz. Campari
1 oz. absinthe
2½ oz. Champagne

Pour the allspice dram into a chilled flute. Slowly pour in the Campari, followed by the Champagne, and top with a layer of absinthe.
