Gin, citrus and celery shrub make this Collins irresistibly refreshing.
1 1/2 oz. gin
3/4 oz. fresh lime juice
1/2 green Chartreuse
1/4 honey syrup (3 parts honey dissolved in 1 part hot water)
1 fresh egg white (pasteurized if you like)
5 drops Bittermens Celery Shrub
Tools: shaker, strainer
Garnish: celery seeds
Combine all ingredients, except the club soda, and dry shake. Add ice and shake until chilled, then strain into an ice-filled glass, top with soda and garnish.
