Sage and citrus add a savory brightness to this gin-based sour.
2 fresh sage leaves
3/4 oz. fresh lemon juice
2 oz. gin (Magarian uses Aviation)
3/4 oz. simple syrup (1:1)
1 fresh egg white (pasteurized if you like)
Tools: shaker, muddler, strainer
Glass: cocktail or coupe
Garnish: sage leaf
In a shaker, gently muddle the sage and lemon juice. Add the remaining ingredients and shake vigorously with ice. Strain into a chilled glass and garnish.
