With a name meant to evoke the unspoken mysteries of faraway places, this sparkling cocktail from Liberty in Seattle is a study in opposing flavors. “Agricole was a natural fit, with the lighter-bodied tropical notes balancing and counter playing the dry and bitter fernet,” says bartender Andrew Dalan.
1½ oz. rhum agricole
½ oz. fresh lemon juice
½ oz. prickly pear puree
¼ oz. rich simple syrup (2:1)
½ oz. Fernet (Liberty uses Fernet-Vallet)
1 oz. sparkling wine
Tools: shaker, strainer, barspoon
Shake the rhum agricole, lemon, purée and syrup in a shaker tin with ice. Strain into a chilled flute and top with the sparkling wine. Float the Fernet on top of wine using the back of a barspoon
