This bitter highball brings together a number of seemingly disparate flavors in perfect harmony. Beverage Director Paul McGee suggests using Fever Tree for the tonic, and Hamilton’s 151 proof for the rum for an ideal balance.
1 oz. Averna Amaro
½ oz. demerara rum
¼ oz. fresh lemon juice
4 oz. tonic water
Garnish: mint bouquet, lemon peel
Build all ingredients in a highball glass. Fill with crushed ice. Garnish with mint bouquet and lemon peel.
