This berry cocktail refreshes with both coconut water and a splash of soda, perfect for the heat of summer.
1½ oz. light rum
2 oz. coconut water
½ oz. blackberry shrub
Tools: shaker, strainer
Glass: double Old Fashioned
Garnish: skewered blackberry
Combine all ingredients except soda water in a shaker with ice. Shake then strain into and ice-filled glass; top with soda; garnish.
Blackberry shrub: Combine 2 cups of blackberries with 1 cup of sugar. Let sit, covered, for at least 2 hours. Strain out the fruit and combine remaining syrup with 2 tsp. of balsamic vinegar. Bottle and refrigerate.
