Things heat up in the Las Vegas episode of Tripping Out on the Cooking Channel when Alie Ward and Georgia Hardstark blend up this piquant, peppery cocktail.
2 oz. jalapeño-infused tequila
1 oz. mango purée (see tip)
3/4 agave simple syrup (1:1)
3/4 oz. fresh lime juice
Garnish: thin rings of jalapeño pepper
Blend all ingredients with 3-4 ice cubes until smooth. Pour into an up glass and garnish with a ring of thinly slices pepper.
Jalapeño-Infused Tequila: Slice 1/2 a jalepeño pepper into large rings and infuse in a 750-ml. bottle of blanco tequila for 4-5 hours. Strain out the peppers and recap the bottle.
Tip: To make mango purée, peel a mango and cut flesh away from pit. Add fruit to blender with a Tbsp. of water and blend until smooth.
