Berry Raton

Light, tangy and straightforward, this unusual berry cocktail refreshes with both coconut water and a splash of soda, perfect for the heat of summer berry season.

1½ oz. light rum
2 oz. coconut water
½ oz. blackberry shrub
soda water
Tools: shaker, strainer
Glass: double Old Fashioned
Garnish: skewered blackberry

Combine all ingredients except soda water in a shaker filled with ice. Shake vigorously and double strain over fresh ice into a double Old Fashioned glass. Top with soda water, garnish and serve.

Blackberry Shrub: Macerate 2 cups of blackberries in one cup of granulated sugar. Let the fruit sit with the sugar, covered, for at least 2 hours and up to 12. Strain out the fruit and combine the remaining syrup with 2 tsp. of balsamic vinegar. Bottle and refrigerate.
