White Port With Lime

A summer-ready cocktail highlighting the bright side of a fortified wine.

Already a popular companion to tonic in its native Portugal, white port stars in this simple combo featured in Seattle chef Renee Erickson’s new book, Getaway. “You can find delicious, honey-toned aged white ports to sip and contemplate, but you probably don’t want to make an apéro with them,” Erickson writes. “Look instead for unaged—and cheaper— white port,” she advises. Use the written ratio as a guideline, adjusting amounts to find your preferred level of sweetness and balance.

Ingredients

Yield:2 cocktails
  • 3 oz. dry vermouth
  • 3 oz. white port
  • 1⁄2 oz. fresh lime juice
  • Tools:shaker, strainer
  • Glass:highball
  • Garnish:lime slices

Preparation

In a shaker filled with ice, stir together the vermouth, port, and lime juice. Strain into 2 glasses that are two-thirds full of ice. Garnish.
