The versatile spirit is perfect for mixing, like in this Cognac cocktail created by Denver bartender Ben Anderson. “The pear and apple notes in the Cognac blend well with the juices in the cocktail,” he says. “And the warm vanilla and caramel flavors balance out the bitters.”
1 oz. rum
½ oz. Cognac
¾ oz. simple syrup
½ oz. fresh lime juice
1½ oz. pineapple juice
3 dash Peychaud’s bitters
1 dash Angostura bitters
Tools: shaker, strainer
Glass: Collins
Garnish: lime wheel
Combine ingredients in a shaker tin with ice. Shake until chilled, strain over ice in Collins glass and garnish with a lime wheel.
