For this Cuban-inspired whiskey sour, Blacktail bartender Ally Marrone uses a tawny port to play up guava’s sweet, fruity flavor. Bourbon and pimento dram lend a touch of baking spice.

  • 1 oz. 10-year tawny port
  • 1 oz. guava mix
  • 1 oz. fresh lemon juice
  • 1 dash Angostura bitters
  • 1 pinch salt
  • Tools:shaker, strainer
  • Glass:wine
  • Garnish:grated nutmeg

Preparation

Add all of the ingredients to a shaker with ice, shake to chill, and strain into the glass over a large ice cube. Garnish.
Guava MixMix 2 parts of guava syrup (2 parts of frozen guava purée, 1 part of water, 3 parts of sugar) with 1 part of pimento dram. Will keep in the refrigerator for several weeks.
