Julio Bermejo’s simple twist on the classic has become a modern standard.
From Julio Bermejo of Tommy’s Mexican Restaurant in San Francisco, Tommy’s Margarita is a slight twist on the classic Margarita that is widely considered to be a modern classic. In the recipe, Bermejo removes orange liqueur from the equation, putting the focus of flavor almost entirely on tequila.
Combine all of the ingredients in a shaker and fill with ice. Shake to chill, strain into an ice-filled rocks glass, then garnish.
Optional: Before preparing the drink, moisten the rim of the glass with a lime wedge and dip in kosher salt.
