Drink creator Jim McCourt of Charleston's Prohibition made it in honor of his pet pig Bella and her love of pears and lemons. "I started with a local gin called Striped Pig (obvious choice), a little lighter on the juniper than most London drys and a nice floral bouquet of lavender and some orange oil," he said. The St. George Spiced Pear liqueur adds both the ripeness and spices people enjoy this time of year, while fresh lemon juice brightens up the cocktail.
