The 9th Island: A Mezcal Highball

9th Island mezcal highball

A light and bright tropical cocktail.

“I find some cocktails are a bit too heavy to consume,” says Juyoung Kang of Vegas’ Fontainebleau. “So I was looking to create a tropical cocktail that was lighter and brighter.” But she also wanted a complex and elevated drink. Her creation? A mezcal highball that’s “easy to drink with hints of roasted agave, pineapple, and spice, softened by the coconut water.” 

Ingredients

  • 1 1/2 oz. coconut water
  • 1 oz. mezcal
  • 3/4 oz. pineapple liqueur
  • 3/4 oz. fresh lime juice
  • 1/4 oz. allspice dram
  • 1/4 oz. agave syrup
  • Tools:shaker, strainer
  • Glass:Collins
  • Garnish:matcha salt rim

Preparation

Rim a Collins glass with the matcha salt and fill with ice. Combine all of the ingredients in a shaker and add ice. Shake to chill, then strain  into the prepared glas.
Matcha SaltMix 1 Tbsp. of sea salt with a 1/2 tsp. of matcha powder.
