A tropical mix inspired by the fruits of Mexico.
After a visit to Mexico, Nick Turner, food and beverage manager at Drift Palm Springs’ Maleza, wanted to create a cocktail that showcased the country’s fresh flavors, particularly the guava he couldn’t get enough of from the fruterias (juice bars). For this guava Margarita, he created a lime cordial that gets a kick of gingery heat to temper the sweetness of the tropical fruit.
Add all the ingredients to a shaker with ice. Shake and strain over ice into glass. Garnish.
Lime CordialIn an aluminum pot, combine fresh lime juice and sugar. Cook over medium and bring to a boil. As soon as the mixture begins to boil, remove from heat and let cool for 5 minutes. Add ginger and lime peels. Allow to steep for 15 minutes, strain, and refrigerate for use. Store in an air-tight vessel in the refrigerator and will keep for 7 to 14 days.
Rose SaltMuddle 2 Tbsp. dehydrated roses (available at many Mexican markets) with 4 Tbsp. flakey kosher salt. Crush the rose pedals gently with a molcajete until salt and rose pedals are incorporated and light pink.
