Tahini Shake With Date Syrup

Date syrup gives this rich and nutty shake PB&J vibes.

This tahini shake recipe is an ode to restaurateur Tal Baum’s childhood memories of growing up in Haifa, Israel, and drinking the decadent treat with his grandmother Rina after a day at the beach. “The smooth and silky shake is rich and nutty,” says beverage director Demario Wallace, “and the date syrup adds an unexpected pop of fruit, which offers notes of a PB&J.”  


  • 3 scoops vanilla bean gelato
  • 1/4 cup milk
  • 2 oz. tahini
  • 2 oz. honey
  • 1 Tbsp. date syrup
  • 1 Tbsp. chopped dates, for garnish
  • 1 tsp. raw sesame seeds
  • Optional: 2 oz. bourbon or other liquor
  • Tools:blender
  • Glass:milkshake
  • Garnish:chopped dates and sesame seeds


Combine gelato, milk, tahini, and honey (optional: bourbon or other liquor) in a blender and blend until smooth and mixture begins to froth. Drizzle date syrup around the rim and inside of the glass, then pour the milkshake into the glass. Top with chopped dates and sesame seeds.
