Sumac-Beet Soda

Sweet and tart flavors balance beautifully in this DIY soda recipe.

This flavorful soda balances the tartness of sumac and lemon with the sweet earthiness of fresh beets.

Ingredients

  • 6 oz. fresh lemon juice
  • 2 1⁄2 oz. beet juice
  • 16 oz. sumac syrup
  • Chilled soda water

Preparation

Combine the juices and syrup to make a concentrate.

To serve, pour 3 oz. of the concentrate over ice and top with 6 oz. of soda water. Refrigerate the remaining concentrate; use within 2 weeks.

Sumac Syrup:

2 1⁄2 cups water
1 1⁄4 cups sugar
1 1⁄2 oz. sumac

Bring all ingredients to a boil then simmer for 20 minutes. Strain through a coffee filter and let cool before use.
