Suikawari: A Gin Sour

Suikawari gin sour with wasabi and melon

A sweet and spicy gin sour.

A whisper of wasabi complements the juicy melon flavor in this gin sour from Nick Hirsch of San Diego’s Japanese restaurant, Lumi.

Ingredients

  • 1 oz. gin
  • 3/4 oz. fresh lime juice
  • 1/2 oz. Nigori sake
  • 1/2 oz. Midori melon liqueur
  • 1/2 oz. wasabi syrup
  • 1 fresh egg white (pasteurized if you like)
  • Tools:shaker, strainer
  • Glass:coupe
  • Garnish:micro wasabi greens (optional)

Preparation

Add all of the ingredients to a shaker with ice, shake to chill and strain into the glass. Garnish.
Wasabi SyrupDissolve 1 Tbsp. of wasabi powder (or 1/4 tsp. of wasabi paste) into 1 cup of boiling water, then add and dissolve 1 cup of sugar.
