Strawberry Highball

Quench that warm-weather thirst with this mix of strawberries, white balsamic, and sparkling wine. Jarmel Doss, beverage director of Austin’s Top Roe, wanted to give his strawberry highball some complexity without adding too many ingredients. A shrub inspired by the classic pairing of strawberries and balsamic vinegar was the perfect solution. Doss opts for white balsamic for its lighter flavor—the result is a boldly flavored yet easy-drinking thirst quencher.

Ingredients

  • 1 1/2 oz. vodka
  • 1 1/2 oz. strawberry shrub
  • 1/2 oz. fresh lemon juice
  • Top with cava or brut Champagne
  • Tools:barspoon
  • Glass:Collins
  • Garnish:Rose petal or basil

Preparation

Combine all of the ingredients except the sparkling white wine in a glass. Top with ice and sparkling white. Gently stir up and down with a barspoon to incorporate.
Strawberry ShrubSlice and remove tops from 1 lb. of strawberries. In a sealable container, add 2 cups of white sugar on top of the strawberries. Cover and leave at room temperature overnight, periodically gently stir and muddle it. The next day, stir sugar into juice well and then strain. Add 33% (the weight of the syrup multiplied by 0.33) white balsamic vinegar. This will for about 9 to 12 months in the refrigerator.
