Spritz Awakening From Kinship

An equal pour of aperitif wine Cocchi Americano and Bigallet China-China (a bittersweet digestif made from macerated orange peels) topped with dry sparkling wine makes this spritz recipe a refreshing pre-prandial option. “The basic inspiration for the flavor profile was the classic Aperol Spritz,” says Michael Chesser, sommelier at Kinship in Washington, D.C. “In place of Aperol, we use Bigallet China-China Amer and Cocchi Americano in conjunction to mimic similar botanical flavors but to emphasize the citrus in the drink. Light and refreshing, it awakens the palate.”

Ingredients

  • 1 oz. Cocchi Americano
  • 1 oz. Bigallet China-China Amer
  • 4 oz. sparkling wine
  • 1 dash grapefruit bitters
  • Glass:wine
  • Garnish:grapefruit twist

Preparation

Pour all of the ingredients into a glass, gently stir, then top with ice and garnish.
