When Ross Simon, owner of Phoenix's Bitter & Twisted Cocktail Parlour, bartended at iconic London bar LAB in 2003, he created this creamy passion fruit cocktail inspired by his favorite childhood treat: the Solero ice cream bar made with vanilla ice cream and passion fruit sorbet. "Transforming that delicious, light, zesty, and flavorful treat into a cocktail seemed like a natural choice," he explains. The cocktail has gone on to become the longtime favorite of bar-goers since Bitter & Twisted opened in 2014.
