Sip’n Soda’s Cherry Lime Rickey

In our March/April 2024 issue, Robert Simonson spotlights the Lime Rickey, an alcohol-free drink from the days of American soda fountains. Here, Mike Parash, the third-generation owner of Sip’n Soda, one of the establishments still serving the beloved classic, shares their popular Cherry Lime Rickey recipe. Touted as “air conditioning in a glass,” Sip’n Soda sells about 150 of these a day in peak summer season.

Ingredients

  • Tools:spoon
  • Glass:16-oz.

Preparation

Wash and cut a lime in half. Squeeze the juice of half the lime into a glass, then drop the squeezed hull into the glass as well. Fill the glass 1/2 to 3/4 with ice. Sip’n Soda uses flaked ice. “It’s the best!” says Parash, but crushed or pebble ice will work. Add the cherry syrup (store-bought or homemade is fine). Pour in the seltzer to the top of the glass while stirring in an upward motion. “This brings the syrup and fresh lime together and makes the flavor pop,” says Parash.
