Sardinian Iced Tea

An Italian amaro anchors this sparkling gem.

While the origins of the Sardinian Iced Tea cocktail are vague, the vibrant mix of amaro, citrus juice, and sparkling wine has inspired many renditions over the years. This one, from Graham Files, was developed during his time at the (now closed) Secret Society in Portland, Oregon, and currently lives on the menu at Someday. “When we opened Someday I was looking for a refreshing crowd-pleaser of a cocktail that would also complement our food menu and the menus of the food trucks in our courtyard,” Files says. “I made a couple small tweaks to the recipe, put it on, and it’s done really well. It’s refreshing, flavorful, and engaging.”

Ingredients

  • 1/2 oz. Averna
  • 1/2 oz. fresh lime juice
  • 1/4 oz. simple syrup (1:1)
  • 4 oz. sparkling wine (Someday uses Paltrinieri Bianco dell'Emilia), to top
  • Tools:barspoon
  • Glass:Collins
  • Garnish:mint sprig, lime wheel

Preparation

Combine the first 3 ingredients in an ice-filled Collins glass, stir, then top with sparkling wine and garnish.
