Salted Lychee Martini

Since most variations of the Lychee Martini skew on the sweet side, Bryan Schneider, beverage director of New York City’s Twin Tails, sought to create a dry and savory take. By introducing a touch of olive brine and salt to the equation, he created this Salted Lychee Martini.

Ingredients

  • 3 oz. vodka
  • 1 oz. strained lychee syrup from a can of Chaokoh lychees (see Note)
  • 2 tsp. St. Germain
  • 1/2 tsp. olive brine
  • 1/4 tsp. kosher salt
  • 1/4 tsp. citric acid
  • Tools:shaker, strainer
  • Glass:martini
  • Garnish:Makrut lime leaf

Preparation

Add all of the ingredients to a shaker with ice and a fresh Makrut lime leaf. Shake to chill. Strain into the glass and garnish.
