Bourbon Buck Rhinestone Cowboy

A summery whiskey highball with stonefruit and floral notes.

Lauren Rojas, head bartender of Jac’s on Bond in New York, injects a bit of summer sweetness into this bourbon cocktail. Peach liqueur “adds this soft floral, fruity layer that rounds out the spice from the bourbon and plays well with the lemon,” she says.

Ingredients

  • 2 oz. bourbon
  • 3/4 oz. peach liqueur
  • 3/4 oz. fresh lemon juice
  • 6–8 mint leaves
  • ginger beer, to top
  • Tools:muddler, shaker, strainer, fine-mesh strainer
  • Glass:Colllins
  • Garnish:mint sprig

Preparation

In a shaker, gently muddle the mint with lemon juice. Add bourbon and peach liqueur. Fill shaker with ice and shake until well chilled. Double strain into a Collins glass over fresh ice. Top with ginger beer. Garnish.
