An Old Fashioned variation with cola notes and spice.

In 2010 Devon Tarby was challenged by a regular at her bar to come up with a cocktail that used chocolate mole bitters. Her answer? The Pop Quiz, an Old Fashioned variation bolstered by Ramazzotti, with mole bitters complementing the amaro’s cinnamon and cola notes.

Ingredients

2 oz. bourbon (Tarby uses Elijah Craig Small Batch)
1/2 oz. Ramazzotti
1 tsp. simple syrup
2 dashes mole bitters (Tarby uses Bittermens Xocolatl mole bitters⁠)

Tools:mixing glass, barspoon, strainer
Glass:Old Fashioned
Garnish:1 orange twist⁠

Preparation

Stir all the ingredients over ice, then strain into an Old Fashioned glass over 1 large ice cube. Express the orange twist over the drink, then gently rub it around the rim of the glass and place it into the drink.
