PJ Breeze: A Spirit-Free Pineapple Highball

Inspired by her love of Herbs de Provence, Victoria Tai, beverage manager of New York City’s Italian trattoria, Olio e Piú, mixes lavender syrup and mint with pineapple and lemon juices for an elevated spirit-free highball.

Ingredients

  • Tools:shaker, strainer
  • Glass:highball
  • Garnish:dehydrated lemon wheel and mint bouquet

Preparation

Add all of the ingredients except the soda to a shaker with ice. Shake and pour entire contents into the glass. Top with pebble ice and soda. Garnish.
