Pineapple Old Fashioned Du Jour

This pineapple Old Fashioned was a delicious solution to two challenges at Milwaukee bar The Mothership: what to do with all the leftover pineapple from the bar’s daily juicing, and how to get customers to try whiskeys from its extensive collection.

Ingredients

  • 2 oz. whiskey
  • 1/2 oz. pineapple demerara syrup
  • 2 dashes of Angostura bitters
  • Tools:mixing glass, barspoon
  • Glass:Old Fashioned
  • Garnish:orange peel

Preparation

Add all of the ingredients to a mixing glass with ice. Stir to chill and strain over fresh ice in a glass. Garnish.
Pineapple Demerara SyrupCover the rind and core of a medium-large (18 1/2 oz.) pineapple with 10 oz. of demerara sugar, muddle, and let sit overnight. The next day, add 3 oz. of boiling water. Remove the rind and core, stir the liquid, and bottle. This will keep in the refrigerator for 2 weeks.
