Palm Desert Date Shake from Pacific Standard Portland

A boozy take on a Southern California favorite.

Jeffrey Morgenthaler of Pacific Standard in Portland, Oregon, transforms Southern California’s iconic date shake into an elevated dessert cocktail with Spanish brandy, PX sherry, and homemade agave date syrup.

Ingredients

  • 1/2 cup vanilla ice cream
  • 1 cup crushed ice
  • 2 oz. agave date syrup
  • 1/2 oz. PX sherry
  • 1/2 oz. Spanish brandy
  • 1 oz. heavy cream
  • Pinch flaky salt
  • ______________________________
  • Agave Date Syrup
  • 500g light agave syrup
  • 500g dates
  • 500g boiling water
  • 100g white sugar
  • 1/2 tsp. cinnamon
  • 2 tsp. salt
  • Tools:blender
  • Glass:milkshake
  • Garnish:whipped cream

Preparation

Add all the ingredients to a blender and blend until smooth. Drizzle additional syrup in a chilled glass. Fill with shake. Top with whipped cream.

Agave Date SyrupCombine water and dates, cover and let sit for 15 minutes. Add agave, sugar, cinnamon, and salt, and blend until smooth. Will keep in the refrigerator for a week.
