Mushroom Sour: A Spirit-Free Recipe

Mushroom Sour alcohol-free spirit-free drink

An intriguing and unusual spirit-free drink.

Looking for a spirit-free counterpart to its popular Mushroom Margarita, Daisies in Chicago created this no-alcohol Mushroom Sour. “The mushroom adds a tangy, earthy quality to the drink and to me tastes a little bit like a mushroom lemonade—tart and sweet with a little bit of savory and salty added in,” says beverage director Katherine Sturgill. The drink has since become the restaurant’s most requested NA drink.


  • 2 oz. mushroom syrup
  • 1 oz. fresh lemon juice
  • 1 oz. egg white
  • _______________________
  • Mushroom Syrup
  • 16g dried mushrooms
  • 1 1/2g fresh thyme
  • 1 bay leaf
  • 2 allspice
  • 2 cloves
  • 2 cups water
  • 4 oz. demerara syrup
  • Tools:shaker, strainer
  • Glass:coupe
  • Garnish:mushroom powder (optional)


Combine all ingredients in a shaker without ice and shake. Add ice and shake once more. Strain into a chilled coupe.

Mushroom SyrupCombine all ingredients, except sugar, in a saucepan and heat on a low simmer for about 20-25 minutes. Strain solids, add the demerara sugar, and stir until sugar is dissolved. Store the mushroom syrup in an airtight container in the refrigerator where it will keep for about a week.
