Meet Me at the Clock French 75 riff

Toast the new year with this show-stopping French 75 riff from Toronto’s Clockwork Champagne and Cocktails bar. Chilled with a frozen rosé sphere and spritzed with absinthe, it’s an intriguing take on the classic.

Ingredients

1 oz. gin
1/2 oz. fresh lemon juice
1/2 oz. simple syrup
5 dashes Peychaud's bitters
1 1/2 oz. sparkling wine

Tools:shaker, strainer
Glass:large coupe
Garnish:frosé sphere, spritz of absinthe

Preparation

Add all of the ingredients, except the sparkling wine, to a shaker. Shake well and strain into a chilled glass. Top with the sparkling wine, add the frozen rosé sphere and a spritz of absinthe.

Frosé SphereFreeze your rosé of choice in a spherical ice mold.
