Lychee Martini

House of the Red Pearl in New York City elevates this Lychee Martini recipe with a silky texture and subtle salinity. The sweetness of lychee is rounded out with cucumber juice and St. Germain.

Ingredients

  • 1 oz. lychee syrup
  • 3/4 oz. vodka
  • 3/4 oz. pisco
  • 3/4 oz. egg white
  • 1/2 oz. St. Germain
  • 1/2 oz. cucumber juice
  • 1/2 oz. fresh lemon juice
  • 1 tsp. agave syrup (2:1)
  • 3 drops saline solution
  • Tools:shaker, strainer, fine-mesh strainer
  • Glass:coupe
  • Garnish:3 dashes of Peychaud's bitters

Preparation

Add all the ingredients to a shaker and dry shake. Add ice and shake again. Double strain into the glass. Top with Peychaud’s bitters.
Lychee SyrupPuree 1 cup of lychee puree and combine with 1/3 cup of granulated sugar in a saucepan. Heat gently until sugar dissolves. Cool and strain. Will keep in the refrigerator for up to 2 weeks.
