Lychee and Pear Chuhi: A Shochu Highball

A fragrant and fruity highball.

Imo shochu can express fruity and floral characteristics far beyond those expected from the humble sweet potato. For this fragrant highball, Kenta Goto uses an imo shochu called Daiyame. “While you can detect the characteristics of imo shochu, it predominantly smells and tastes like lychee,” Goto says.

Ingredients

  • 1 1/2 oz. imo shochu
  • 1 1/2 tsp. Elderflower & Pear Mix
  • 1 oz. chilled tonic water
  • 3 oz. chilled soda water
  • Tools:barspoon
  • Glass:highball

Preparation

Build all of the ingredients in an ice-filled highball glass, then gently stir to combine.

Elderflower & Pear MixCombine 3 parts of elderflower liqueur with 1 part of unaged
pear brandy.
