Lower West Side: An Irish Whiskey Cocktail

For this Irish whiskey cocktail, bartender Kenneth McCoy looked to the Manhattan for inspiration, tweaking the recipe until he discovered that a pinch of salt was just what it needed to sing. “The salt really brightens it,” he says.

1¾ oz. Irish whiskey
¾ oz. sweet vermouth
½ oz. Lustau East India sherry
½ oz. dry vermouth
1 dash Angostura bitters
1 pinch coarse sea salt
Tools: barspoon
Glass: coupe
Garnish: cherry

Stir all of the ingredients together over ice until chilled. Strain into a chilled coupe and garnish.
