Low-Proof Martini From Love’s Alibi

A Martini light enough to begin the night.

For a low-proof Martini to complement apéritif hour bites, stir up this savory sipper from Jordan Spaulding of Nashville bar Love’s Alibi. He originally created the cocktail around Faccia Brutto’s Centerbe Giallo. “The spirit itself naturally has dried yellow floral tones, a savory spice, and just a hint of a pickled characteristic,” he says. However, he adds that Strega or yellow Chartreuse will also pair well with the blanc vermouth and manzanilla sherry.

Ingredients

  • 1 oz. herbal liqueur (Love's Alibi uses Faccia Brutto Centerbe Giallo, see Note)
  • 1 oz. manzanilla sherry
  • 1 oz. blanc vermouth
  • 1/4 oz. piparra pepper brine
  • 3 dashes orange bitters
  • 3 drops confit oil
  • Tools:mixing glass, barspoon, strainer
  • Glass:Martini
  • Garnish:piparra pepper, Castelvetrano olive, and 3 drops of confit oil

Preparation

Add all of the ingredients to mixing glass and stir with ice until fully chilled, strain into the glass and garnish.
Confit OilAdd 16 oz. of olive oil, 3 fresh rosemary sprigs, and 10 cloves of peeled garlic to a pan and simmer on low for 40 minutes. Afterwards, wait until cool, then strain into a sealable container. Will keep in the refrigerator for 3 to 4 weeks. Before using, make sure it reaches room temperature before adding to the finished cocktail.
NoteYellow Chartreuse or Strega can be substituted.
