Lost at Sea: A Sake Cocktail

This sake cocktail from Candice Coy of Seirēn in New York City highlights how using ingredients from different places can result in a delicious melding of flavors. Coy combines sake’s melon notes with a plum liqueur’s juiciness and rounds out the sweetness with the minerality of a Spanish sparkling wine. “This cocktail was introduced as that unexpected keynote in a song that somehow brings the entire concerto together,” she says.

Ingredients

  • 1 1/2 oz. sake (Seirén uses Ono)
  • 1 oz. fresh lemon juice
  • 3/4 oz. simple syrup (1:1)
  • 1/2 oz. plum liqueur
  • 8-10 red seedless grapes
  • 2 oz. blanc de blancs, to top
  • Tools:muddler, shaker
  • Glass:rocks
  • Garnish:3 grapes on a pick

Preparation

Add the grapes and sake to a shaker and muddle. Add the rest of the ingredients, except the Blanc de Blancs, skae with ice. Dump the contents into a glass, then op with the blanc de blancs and garnish.
