In this tropical tequila cocktail, Melany Mocanu at Charlotte’s rooftop bar Nuvolé TwentyTwo amplifies the vibrant sweetness of pineapple with a homemade syrup, featuring pineapple and orange juices and the spices of cinnamon and nutmeg.

Ingredients

  • 1 1/2 oz. reposado tequila
  • 1 oz. Velvet Falernum
  • 3/4 oz. pineapple juice
  • 1/2 oz. tropical syrup
  • 1/4 oz. fresh lime juice
  • Tools:shaker, strainer
  • Glass:rocks
  • Garnish:pineapple wedge and dehydrated lime

Preparation

Add all of the ingredients to a shaker with ice and shake to chill. Strain over fresh ince into the glass. Garnish.
Tropical SyrupCombine 2 cups of demerara sugar, 1 1/2 cups of pineapple juice, 1/2 cup of fresh orange juice, 5 cinnamon sticks, and 1 whole nutmeg, grated in a pot and bring to a boil. Reduce to a simmer, then let cool for 24 hours. Strain and bottle. Store in the refrigerator for up to 1 month.
