Castle Sour: An Irish Whiskey Sour

For Charleston’s Prohibition bar, beverage director Jim McCourt amassed one of the largest collections of Irish whiskey in the Southeast. To help introduce the spirit to guests, he created this whiskey sour recipe that’s balanced by clove and nutmeg. “The Irish whiskey is strong enough to shine through, but the subtle notes of honey and caramel are still noticed,” he says.

Ingredients

  • 2 oz. Irish whiskey
  • 1 oz. fresh lemon juice
  • 3/4 oz. clove syrup
  • 1 egg white
  • Tools:shaker, strainer
  • Glass:double Old Fashioned
  • Garnish:grated nutmeg

Preparation

Add all the ingredients to a shaker with ice and shake to chill. Strain over a large ice cube in the glass. Garnish.
Clove SyrupAdd 4 oz. of white sugar, 4 oz. of water, and 6 whole cloves to a saucepan. Bring to a simmer, cover, and take off the heat. Allow to cool, strain, and bottle. Will keep for one month in the refrigerator.
