Jacqueline Dodd is a whiz when it comes to cooking with beer, as this clever recipe shows. When you’re planning your next backyard barbecue, think about adding a splash of beer to your a batch of watermelon, and you’ve got these IPA watermelon skewers from Dodd’s The Craft Beer Bites Cookbook.

Ingredients

  • 1 lb. watermelon, cut into 1-inch cubes
  • 12 oz. IPA (plus additional, as needed)
  • 2 oz. Cotija cheese, crumbled
  • 2 Tbsp. chopped fresh mint

Preparation

Place the watermelon in a large bowl or baking dish. Cover with the IPA, using just enough to fully submerge all of the watermelon. Cover and refrigerate for 30 minutes, then drain.

Skewer each cube of watermelon with a toothpick or cocktail skewer; add to a serving plate. Sprinkle with Cotija and mint. Serve chilled. Serves 8-10.
