Named after the iconic Texas wildflower, the Indian Paintbrush is a vodka cocktail that’s “beautiful in its simplicity and balance,” says Garage bar general manager Paul Finn. With fresh local grapefruit juice and rosemary, “it perfectly captures the essence of Austin.”

1½ oz. vodka
1 oz. fresh grapefruit juice
½ oz. rosemary syrup
½ oz. fresh lime juice
2 dashes Peychaud’s bitters
Tools: shaker, strainer
Glass: coupe
Garnish: rosemary sprig

Shake the ingredients together with ice. Double strain into a chilled coupe and garnish.

Rosemary Syrup
1 cup water
1 cup granulated sugar
7-8 stems fresh rosemary

Prep your fresh rosemary by cutting 7-8 stems to 4″ in length. Pour the water into a pot and cover. Turn the stove on high. When the water starts to boil, turn off the burner, remove the pot and add the rosemary. Stir the rosemary for 2 minutes, then add the sugar. Continue to stir until the sugar dissolves. Once dissolved, fine strain the mixture into a container. Let it cool, then seal and refrigerate.
